Vegetarian cuisine doesn’t mean sacrifice
This attitude is an unusual one in #Berlin, where he operates his restaurant “Margaux” together with his wife Kathrin and about 20 employees, right around the corner from the Brandenburg Gate. It’s even unusual among his fellow chefs, and that makes Hoffmann an outsider in the profession. The term he consistently uses is “vegetable cuisine.” That’s because vegetarian cuisine is generally regarded as being nothing more than dishes created for people who for a variety of reasons refuse to eat meat.
